We want to investigate this issue you've been having. May we know what you have done so far to resolve this concern? Have you already tried performing a system restart on your device, as suggested by other moderators? Also, could you tell us the running OS version on your device? You can do this by going through the settings and system on your device.

I have factory reset the tv and my phone, I have also made sure all the setting listed on this community were turned on such as the airplay setting on the tv and the fast start setting. My os version is 17.1.1

Same for me since the update on Roku streaming stick 4k (model 3820X)
I did all stated troubleshooting steps and even removed the pairing between my apple devices & streaming stick but no longer able to pair them again whether through homekit QR code nor is it showing in the possible airplay devices to newly pair.
everything is up-to-date & streaming stick connected to same SSID with latest firmware, yet still ios can no longer screen mirror

I have done some troubleshooting after seeing everyone has the same issue.
I found that on iOS devices the problem is a privacy setting in Wi-Fi settings.
Go to:
Settings > Wi-Fi > “your_wifi_name”.
Then locate Private Wi-Fi Address setting and switch it to off.
After completing these steps your Apple Airplay should work as advertised.
This worked for me. Hopefully you find this solution useful. 😁
