Has anyone taken Roku equipment out of country to use while traveling for example to San Pedro Belize - will have WiFi access?

Please be advised that the channel availability/access on Roku devices will vary from region to region. A Roku device will work in any location; channels may not be available on your device in that location, based on each channel provider's discretion. For more information, you'd want to contact any specific channel/service provider to inquire further about whether they offer their channel/service on the Roku platform in your region.
Note: Roku streaming players and Roku TVs need Internet access to stream content. They use wireless to connect to your home network, or you can choose a model that offers a wired Ethernet connector.

@Manix Yes, the WiFi will work, assuming the WiFi network is not using a DFS channel on 5 GHz. On 2.4GHz, you should be OK, although your Roku will only work on channels 1-11, so in case they use channel 12, 13 or 14 you won't see their WiFi at all. That is a possibility in another country.
That said, many providers will geofence their service and if your IP address comes back as an unsupported location you will not be able to access their content. Examples are MAX, Prime Video, Netflix, and more. YouTube should work anywhere. Just don't be surprised if your desired provider has you blocked from accessing their content.
