Peacock TV does not work on 4K Streaming Stick. When you click on it the screen goes purple and then right back to home screen.
There is no option to delete the Channel when you click on *

IF YOU SEE "MANAGE SUBSCRIPTION" INSTEAD OF "REMOVE CHANNEL":
A channel whose subscription was made THROUGH ROKU can not be removed via this onscreen user interface while the subscription is active. The "Manage subscription" option will allow you to keep the app from auto-renewing when the current pre-paid subscription runs out and prevent any additional payments, but until then it remains active. The "Remove channel" option will return when the subscription period expires.
For immediate channel removal you can use the official Roku remote app on an Android/iOS phone/tablet. This will only remove the channel from your Roku; it will NOT cancel the paid subscription or prevent future payments..
• At the bottom of the first screen, click "Devices", and if necessary connect to one of your Roku devices.
• In the connected device section, click "Apps on Roku".
• Click AND HOLD the channel you wish to remove (a quick click will bring up the remote controls instead).
• Click on "Remove" and confirm.
I've never tried to remove a subscribed-thru-Roku channel via the remote app (I haven't had one for years) but many confirm this works for them even while the subscription is still active.
Thank you @makaiguy Your advice worked for removing the app and as you said it did not cancel my subscription. Unfortunately for me reinstalling the Peacock TV app did not solve the problem for me. I see this has been a problem for a bunch of Streaming Stick 4K users so I hope Roku Streaming Stick (3800 series) and #PeacockTV will rectify the problem soon. Thanks so much for your assistance!
@makaiguy YOU SOLVED IT! I did one restart as you suggested and it did not work. Then I did a restart and unplugged and replugged the power and HDMI (the stick it's self); that too did not work. Finally I did a restart, unplugged both power and HDMI and left them off for about 2.5 hours and upon replugging and reinstalling the Peacock TV app IT WORKS! THANK YOU for all you detailed and clear instructions!

FWIW I have two 4K Streaming Sticks, a 3810 and a 3821. I'm having no problem watching Peacock on either one and have been actively watching the Olympics on both attached TVs. So it's not a general Streaming Stick 4K problem.
Both have Peacock TV Version 5.7, Build 16.
Roku software 13.1.4 on both. The 3810 has build 1512-50, the 3821 has 1510-CU.
The only thing I can think to suggest is after removing the channel, did you restart** your Roku to clear its memory cache BEFORE reinstalling the channel? Without the restart you may not get a clean reinstall.
Depending on your Roku model you'll find the "System restart" option under either "Settings > System > Power" or if you don't have the Power option, under "Settings > System". If you don't have sufficient control to use the menus, or if it is just more convenient, you can also restart by pulling the power plug for a short while, then plugging it back in.
**On a Roku TV with "Fast TV Start" enabled, turning the TV off/on only puts you in/out of a low power standby state, it does NOT give you a complete restart. Use the methods above.
