If bypassing your AVR magically make 4K content appear with the Roku Ultra, then there's something amiss with the AVR. The VSX-534 supports 4K, but you have to make sure all the internal video processing is turned off. It sounds like the VSX-534 has some sort of processing enabled that is only outputting 1080 to your display. I have two different Yamaha AVRs, both with an Ultra connected, and both passthrough 4K video without a problem.

The ultra is garbage. Apple TV 4k, Chromecast, Google TV all work fine through the same hdmi port. Ultra refuses to pass 4k. Cheap 4k streaming stick passes just fine. Going back to using Apple TV 4k...
Not sure if you ever figured it out or if you even have the Roku Ultra and Pioneer AVR but I think I have the answer for you being able to get 4k 60 to show on you device. I have the Pioneer Elite Vsx-ls505 and not all the HDMI inputs support 4k 60 120 or 8k. Only the first 3 inputs support it. I had the same problem with my Roku Ultra only showing 1080p and if I manually select Dolby Vision it only show 4k 30. I changed to the first HDMI input on my receiver and it was fixed!
