“In the meantime, you can try to highlight the YouTube channel tile and press the star (*) button on your remote to update it.” — I'm on the latest version of the YouTube app, and no updates are available now. Still experiencing the same issue.

We've been notified of updates from the team and we'd like you to try and connect your Roku Premiere+ to an alternative network connection to see if the same issue persists. Perhaps a mobile hotspot would do.
