Is there a maximum number of channel apps one can have on a Roku device?

100 or 150 or 200?

Does having too many apps, effect the Roku's performance?

I know of no limit. But different devices have different amounts of memory storage for channels. Roku devices will fill that memory storage, then if additional channels are installed they will offload the least used channels to add the new ones. Then if the channel that was offloaded is requested, it reloads that channel and offloads the next least used at the time. So in theory it can continue to offload and reload the channels as needed. 

As far as any performance hit, it's only going to be noticeable when one of the offloaded channels is requested. There will be a slight lag as it reloads that channel from the cloud. Once it's loaded, then there's no further issue. 

I have 38 channels installed on my players. I only notice it loading a channel from the cloud on my Premiere and older Ultra players, which only have 512MB of channel storage space. My newest Ultra (4800), Express 4K+ and Stick 4K+ all have 4GB of channel storage.

I think there is a channel limit, at least on Roku TV's. I had 94 channels on my device and tried to add another and it kept giving me a failed to install error. After I deleted a channel then the installed worked fine.

thanks for the reply and info.

I have several different models of Roku, including  the stream bar and stream stick and premier and express models.

Currently have >120 channel apps loaded onto my account,
