In the group people have said now can delete a single recording by going to record options and choosing delete episode.  I do not have that option.  

It only started a week ago.  Seems like it happened when I got notices of Roku now offering unlimited recording space.  

How can I continue to delete single episodes?

Roku itself doesn't have a DVR feature, so the answer to your question is going to vary with whatever app you are using.  (Which also means that when reading posts, you need to be sure you and they are talking about the same app.)
