Thanks a million for the detailed explanation. I strongly suspect that that DD vs DD+ is the issue. I'll have to dig a bit. At a glance the manual I have for that Sony SA-S350 soundbar has very little specifics that I can find.
EDIT: Later found this in the user guide: Audio formats supported by the Sound Bar are as follows. • Dolby Digital • Linear PCM 2ch. Looks like you called it.

You'll get some 5.1 (e.g. from AppleTV+ or The Roku Channel), but if you want 5.1 from all streaming services/apps from HDMI/internal apps and still use that soundbar you'll need to:
1) Change the G4's Digital Sound Output = Auto - try again via ARC; if that doesnt work then
2) Connect TV to SB via Optical, change G4's Use Wired Speaker = Optical Out Device
or
1) Get a Roku 4800/4802/4850 (Ultra 2020, 2022, 2024) or
2) Get FireTV Stick 4K/Max Gen 2, Fire Cube Gen 3 (AFTKM/AFTKRT/AFTGAZL)
(You want a streaming device with a Dolby decoder to convert the DD+ to DD for output for that SB)
....or replace/upgrade the SB with a newer one that supports DD+

Perfect. Thanks for the details! One of the main things I bought the Roku for was Fandango at Home, because LG forces you to create an LG account on their site just to install some apps. That pissed me off so much I just bought the Roku. It doesn't look like I'll get surround from that with this setup. The most important thing for me was to get Dolby Vision video working on the Roku and I was able to do that (based on another thread I started here).
Now that I know what's going on I'm not concerned about it, and as you said, if I really decide I want the surround enough I'd just spring for a better / newer soundbar.
