So, I cut the cord long ago and do not have a TV provider. (I do have internet of course, but no TV per se) I use ROKU and Firestick exclusively for their free content, plus OTA. My question is, what do I put in where it asks for TV provider?

There are some streaming channels in the Roku Channel Store that are only available to customers with a cable or satellite subscription, these are known as authenticated channels or TV Everywhere channels.
TV Everywhere channels are published by the cable/TV network and offer cable and satellite subscribers access to additional content on their Roku streaming player or Roku TV as part of their subscription.
If you are inquiring specifically on how to access the USA Network channel on your Roku device, you'll want to contact the channel provider support directly to inquire further for more information about that channel's features and functionality. Many channels on Roku are developed and maintained by the channel provider themselves.

Since you don't have a TV provider, there's only two possible ways to access a subscription channel. You either have to subscribe directly with the provider (I don't know if that's an option with this specific provider) or subscribe to one of the streaming TV providers, such as YouTube TV, Fubo TV or Sling TV. And again I don't know specifically if USA Network is available through those providers. USA Networks is really the only one that can tell you all of your options.
