I’m having the same problem. There is no way to turn off subtitles on the Roku app using Firestick. There is only a way to change the format. Size, font, background etc.

There isn’t any accessibility option when using Roku on the Firestick. The accessibility option is only an option when using Roku on a smart TV
Agrimaldo is correct. When using the Roku Channel app on Fire TV or Firestick, there is NO OPTION for Accessibility in the "Settings & Account" area of the app. In that area, there is a "Captions" category, but there is no means to disable or enable captions.
Again, the Roku Channel app on Fire TV and Firestick has NO Settings/Accessibility menu. Without that menu, the Roku Channel app provides the user with NO MEANS to enable or disable Captions. It seems that the Roku Channel app on Fire TV and Firestick is currently designed in such a way that the user has no control over whether or not captions are enabled or disabled.
@RokuJanadeeK, I hope this clarifies the issue sufficiently that you can begin to give helpful replies to this issue. You can't just keep giving canned responses that only apply to Roku device users. Please understand that this is a "Roku Channel" app issue for Fire TV and Firestick users. This is NOT the same app used by Roku device users.
Fire TV and Firestick seem to have a system level status for captions. If the Roku Channel app running on a Fire TV or Firestick is run when some previously run app had enabled captions, the Roku Channel app leaves the captions setting active. Conversely, if a previously run app (Prime Video, for example) had disabled captions, the Roku Channel app leaves the captions setting disabled. The Fire TV or Firestick Accessibility setting for captions seems to be irrelevant. It only matters whether the previously-run app had captions enabled or disabled.
For now, I think the only way to control the enable/disable status of captions when running the Roku Channel app on Fire TV or Firestick is to modify the system level status of captions before running the Roku Channel app. You can change the system level status of captions by setting the caption status in some other application or by setting the desired caption status in the Fire TV or Firestick Settings (Gear Icon)/Accessibility/Closed Caption menu and then restart the Fire TV or Firestick (Settings/Device & Software/Restart). Both of these options are inconvenient when the thing that's really needed is for Roku to add the option to enable or disable captions to their Roku Channel app's Settings & Account/Captions menu area.
I was experiencing this same issue using the Roku Channel on my Amazon FireTV Stick 4K, but only on the NBC News Now channel. Captions were turned off on the Amazon FireTV Stick 4K. To fix the issue, I opened https://therokuchannel.roku.com/ and signed into my Roku account. Then I selected Live TV and the NBC News Now channel. Then on the navigation bar, I clicked captions and turned subtitles off.
