According to IMDB, Season 1 only has 7 episodes for this series.

• I was watching Interview with the vampire season 2 episode 5 Sunday night - I did not finish and now the episode can not be found on AMC + on Roku 
• I too subscribed for this series 
• it is on AMC + on Direct TV but I do not want to pay for another channel I should already have 
• I tried last night and tonight without success to finish this episode
