Couple of questions come to mind.
First, it sounds as if your PS5 is interfering with the Roku TV WiFi connectivity. The devices to actually transmit RF, that's how it works, and it's possible for one device to interfere with another. So...
Does this happen if you turn off your PS5? Actually power it down. Then does the Roku connect within a minute? Or does it stay disconnected?
If you move your PS5 a few inches or feet, depending on how much play you have with the cables, does that change things?
