I can't get past the update screen I'm going around in circles. I have tried resetting the device. I have restarted my router and neither is working. Can you help? Thank you

Could you let me know what error message you're seeing on the screen when your Roku tries to install the update?
In the meantime, you may try to connect your Roku to a different internet connection, such as a Mobile Hotspot, to see if that'll do the trick.

@LosingthewillHave you tried using a network app like WiFi Analyzer for Android or something similar from the App store? If not, install it then see how many others use the same channel/band and log into the router and switch to a channel with less congestion. If you use service provider router, its likely the channels are being selected by the default, 'auto' setting which is often the problem..manual selection is always best
