I'm having an issue where I see the categories from the feed listed on the preview, with the tiles reflecting the video to initiate playback. However, when the channel is published no categories or videos appear.
I've tried changing it so the categories are "From Feed" or "Custom." When it's set to "Custom" I cannot see them on the preview either. When it's "From Feed" I see it on the preview. No matter what, nothing appears on the live channel.

That didn't help things either.
Is this a new or existing channel?
I have have successfully converted and published many SDK Channels from streamhoster channels for clients!
If your talking the Direct publisher version then you are dead in the water because its no longer supported!
The direct publisher feeds will not parse currectly for any feed updates, After going back and forth with partner sucess support.
I was directed to convert to SDK for any support!
I have been converted many channels from many providers without error! I suggest you convert to SDK as Roku has sunsetted Direct publisher and is removing all Direct publisher channels this january!!
However if you are speaking of an SDK Channel and using ur streamhoster feed url than you should not be having an issue at all as their feeds work well! I have worked with Micheal at stream hoster and he is aware of the Roku updates and issues!

There's a general misconception as to how categories work. If you've specified "from feed" for your categories, your feed file must actually contain Category objects. It cannot contain solely playlists as your sample feed show. Per the Roku JSON spec:
The category object defines a new category your channel will display, and the content included in it based either on a playlist (see object description below), or a query containing one or multiple tags. You can also create them directly in Direct Publisher.
It may not be obvious, but, you actually need to define both objects. A category object that specifies the name of a playlist, and, the actual playlist object.
I say it again, Roku is not supporting existing Direct publisher channels updates anymore!
You have to convert to SDK! And your feed is fine! I have done many for streamhoster clients!

Firstly, Roku has announced that it will be sunsetting its Direct Publisher tool early next year as part of its ongoing efforts to enhance their operating system and facilitate the rapid introduction of new features. We want you to be aware of the following critical dates:
On July 12, 2023, Roku will no longer support the creation of new channels via Direct Publisher. Existing channels, however, will continue to function until early 2024.
Come January 12, 2024, the Direct Publisher tool will be discontinued, and all Direct Publisher channels will be removed from the Roku platform.
To avoid any service disruptions, Roku encourages publishers to migrate their channels to SceneGraph or SDK by January 12, 2024.

You are correct about the mrss feed link posted but the json feed is good!
His streamhost json feed is fine and its all he needs to parse his categories, I checked it and sideloaded it!
The other link was an rss feed and we dont need that!
He just needs to use the json feed w the category tags and playlist which streamhost provided him with!
What he is not understanding I believe he doesnt know or He is not aware that Roku sunset Direct publisher and is no longer supporting Direct publisher and wants everyone to coinvert to SDK by January or loose their channel!
