I’m in a Marriott right now with an LG TV. In this hotel, the external box is actually fairly accessible. This room has two TVs, so my Stick is on one and my Onn player is on the other. In both cases I’m connected the HDMI 1 on the external box, NOT the TV. I did try the TV’s input first, but as expected no control of the volume. The ONLY way you can use a Roku on TVs like this with the external box is to connect directly to the HDMI input on the external box. I have no problem with the hotels making the set up this way, but they have got to make the box easy to access. 

For those looking for a different solution, there is none. The TVs are programmed with the volume at 100% and use the external box to control volume. If you want to use your Roku (or any other streaming device, they will all be the same) on these TVs, you don’t have any choice but to use their external box to connect.

Actually some Marriott hotels have fixed this as they have a menu option for your media, one is for blue tooth, the other for your HDMI media which works just fine.

Remember that most if not all major hotels are franchised, and not operated by the named company. It's up to each location to decide how their entertainment equipment is configured. And so far in my experience it's extremely rare to have a hotel with the TV volume actually controlled by the TV itself, and not the external media device. But I just retired, so my traveling days are pretty much over. It's unlikely I'll be using my Roku in a hotel very often.
