Issues with 2 different ROKU models, it must be my lucky night.....
I wanted to add PEACOCK to my 2016 ROKU Stick and for some reason on that model it does not come up in the channel search, when PEACOCK was installed to my Smart TV I downloaded it to install on my other 2 ROKU devices, it just didn't install to the 2016 Stick.
NBC says its NBC Peacock app for Roku was written by NBC to be compatible with the following Roku models (Check your model number via Settings > System > About):

Roku 2 (4210X model only)
Roku 3 & 4 (model 4200X or later)
Roku Streaming Stick (model 3600X or later)
Roku Express/Express+ (model 3900X or later)
Roku Premiere/Premiere+ (model 3920X or later)
Roku Ultra/Ultra LT (model 4640X or later)
Roku TV and Smart Soundbar (model 5000X or later)
You can check your model number via Roku menu path:
Settings > System > About
