It's a "feature". It's called "instant resume" and it's saving the state of the app so that it can be restored the next time the app is launched. The app is "closed" in that it's no longer running. It can't be disabled in the current software. Whether an option will be given in a later release is anyone's guess. So far the Youtube app is only one that I know of that has taken advantage of this "feature".
