Here's the fun I'm having with the Paramount+ App on Roku:
Live programming won't load on Roku (it does load on mobile and on website). Following basic troubleshooting, I've tried updating Roku, resetting Roku, and updating the Paramount+ app.
But I can't uninstall and reinstall the app — which is roku's typical advice — because you've removed my option to uninstall an app if I'm subscribed to the service.
I canceled auto renew but still don't have the option to uninstall the app (This is ridiculously unhelpful UX design).
What am I supposed to do now, wait another 27 days for the subscription to cancel before uninstalling the app, then reinstalling, then paying for it again to see if the service works?

I couldn't agree more and I've been trying to get Roku to change it for some time.
Try using the official Roku remote app on an Android/iOS phone/tablet connected to one of the Rokus on your account. At the bottom of the first screen, click Search and do a search for the installed channel name. On the resulting screen you should get options to Launch the channel on your Roku, or Remove the channel. I've never tried to remove a subscribed-thru-Roku channel (I haven't had any for years) but some have said this works even while the subscription is still active.
The inability to remove a channel that needs to be reinstalled while it is under an active subscription is one of the reasons I'll never again subscribe to a channel through Roku. Now any subscription I make is done directly on the channel's website. This way I can also use the channel's own app on any platform they support, not just Roku.
