Disabling Dolby Vision and other HDR standards that change video settings

This is completely untrue. I have the Hisense 6 Series with Roku. Once an app starts streaming in Dolby Vision is is impossible to select anything other than Dolby Vision in the display settings. 

When you are in the home screens on Roku or the apps, there is no option to disable Dolby vision.
