I found a fix that returned my antenna channels, at least the ones I set as Favorites.
Settings>TV inputs>LiveTV>Rename>select the “Antenna TV” icon.
Check your Favorites or find on Live TV.

I also found that the antenna channels still disappear if I go back to LiveTV, but if I scroll down the list of app buttons to the Antenna button, the antenna channels are there
That "Antenna Button" you are finding amongst your channels/apps on the Home Screen is your "Live TV Input".
It is a good idea to keep this input named Antenna TV. (to avoid confusion).
The only way to watch your locals/OTA/antenna channels is to select this Live TV "Input" (Antenna TV). Just like you are doing.
If you select any other option to watch Live TV (from the left side menu items on Home Screen, or from within Roku Channel), you will only be seeing Streaming Channels, not antenna. There is nothing wrong with your TV or setup. Roku just made it unnecessarily confusing by naming the Antenna input "Live TV" by default.
