Roku Express is unable to use AirPlay on YouTube

I use AirPlay to play YouTube videos on my Roku Express.  A few weeks back I noticed the colours are highly contrasted making it unwatchable.  AirPlay with other iOS apps works fine, it seems to be only YouTube which is broken. I have reproduced the issue with multiple iOS devices and 2 different Roku Express units.

I have found at least 2 threads on Reddit from within the last few weeks discussing the same issue so it seems I am not the only one facing this problem.

Is this a known issue which has been caused by a recent update?
