I was recently given a Roku stick model, 3810 X without the remote, which remote can I purchase minimally speaking that will work and I connect to the stick? I’ve heard it has to have a pair button...

Stick requires usb cable that runs everything
Unless the giver also gave you the required cable, model WR001 you cannot use Stick. Most everybody's male connecter breaks because it has to plug into the 3810x which holds the weight of power cords, adapters more so they break and can mess up your hdmi connection as well.
