As mentioned, the only way you can watch anything on your phone is by using a website. You can't watch the Roku itself on anything but a display with an HDMI connection. Many of the service providers you find on a Roku device have websites that also provide access to their media content (such as Netflix, Prime Video, MAX, etc.), but there's no way to see whatever the Roku device is streaming on your phone.
