Roku switches WiFi networks without my permission

I use two networks at home. One for all of my general internet stuff, and another offline network hosted by my golf simulator.

When I connect my Roku Ultra to the offline network (so I can screen mirror an iPad that’s connected to the golf sim) it works fine, UNLESS it’s aware of the main network (from when I use it to watch TV on the projector screen).  In that case it switches to the main network after about 30 seconds into my screen mirroring session.

Does anyone know of a way to keep the Roku on an offline network even if a regular one is available?  Currently I have to reset all networks so it’s not aware of the online one, type passwords in repeatedly, etc.
