When I play Apple TV+ on my iPad and iPhone it plays correctly. As soon as I airplay from these devices the language changes to an unknown to me language. 
I checked the airplay language on airplay and it is in English.

The strange thing is every other app that I airplay is in English. 
also, I have two Rokus and they both do the same thing

Out of curiosity, is there a reason why you are trying to Airplay a channel that you can access on the Roku device directly?

When you play the same content through the Apple TV+ channel directly in the Roku device (not through Airplay), are you experiencing the same issue?
