After diabling Guest Mode, I am now logged back in as me, the main ROKU account holder, and all my channels are missing from my home screen?!?  Do I have to log back in to every single channel individually every time I enable and then disable Guest mode?

Your apps should come back.  You may have to restart and/or check for updates.  According to Roku, "you may need to sign back into some apps".
