Viewing shows on subscriptions
I’ve paid for Peacock and Paramont both have been deducted from my account. Why am I not able to see any of my shows Chicago on Wednesday night. Yellowstone on Sunday night was unavailable. Can somebody explain what’s going on or what I need to do

I don't know about Chicago on Peacock, but Yellowstone is not on Paramount+.

From its very first season, Paramount has released each Yellowstone season first on the Paramount Network CABLE/SATELLITE channel. This started before the Paramount+ streaming app existed. For streaming, Paramount contracted at that time with Peacock to carry Yellowstone after each season has been run (and maybe rerun?) on Paramount Network cable.
So seasons 1-4 and the first part of 5 are available on Peacock. But for the time being, Part 2 of season 5 is exclusive to Paramount Network cable/satellite channel.
Paramount did run current episode 9 (the first episode as season 5 resumes after the Covid shutdown) on CBS local stations and at least one other CBSUniversal owned outlet as a teaser (my YouTube TV found it on both CMT and Paramount). Those with the higher tier Paramount+ with Showtime option get access to their local CBS outlet and could have seen it that way. But unless Paramount changes their minds, the other remaining 5 episodes initially will be available only via the Paramount Network cable/satellite channel.
If you don't want to wait until the second part of Yellowstone season 5 hits Peacock in several months, then you'll need to subscribe to a cable/satellite system that carries Paramount Network, or to a streaming service that carries cable channels, such as Hulu plus Live TV, YouTube TV, Directv Stream, Philo, fubo, etc.
