It's probably going to depend on the video stream format if it can be viewed on a Roku. I don't have any such cameras, so can't offer any assistance with the settings.
But you probably want a static IP address on your camera. If the camera doesn't offer that level of configuration, you can create an IP address reservation in your router to the camera is always assigned the same address. If you don't use a static IP, the camera might get a different address assigned over time and then you'd lose the connection.
