This started about a month ago, where my TV would turn off randomly. I thought it was my TV but come to find whenever I disconnect the Roku HDMI the TV works perfectly so the problem is either the Roku or the HDMI (The one that came with the Roku). Has anyone had this problem and any suggestions?

Have you tried contacting Roku TV manufacturer support yet to inquire further? We'd suggest starting there to see what options or suggestions they can provide. Each Roku TV manufacturer provides direct support and warranty services for their products running the Roku OS.
