Hi Nick42,
Greetings from the Roku Community!
We'd love to assist you further with this issue you're having with the Roku mobile app since you're unable to sign in, and we appreciate the fantastic troubleshooting steps you have taken to resolve it.
Do you have another phone? You can try downloading the app and see if the problem still exists.
Also, make sure both devices are on the same network and in the same band. Most WiFi routers create two separate networks for each WiFi frequency band (2.4 GHz and 5 GHz).
We look forward to hearing your response.
Thanks,
Chel

I tried it on a friend's phone and get the same error.

Yes it's on the same network and same band. I've also attempted a different band, mobile data, and a friend's internet connection and all have the same error.
I feel I need to clarify, I can use the app to connect to my Roku TV and use the remote features.
What I can not do is log in to my Roku account in the Roku mobile app. I should be able to log into the Roku mobile app regardless of what network I'm connected to and whether or not my TV is on the same network. For example, you can use the Roku mobile app to manage your saved videos and stream videos on your phone while you're away from home. I cannot do this currently because it gives me the error "Error Something went wrong, please try again later."
