Does Roku offer a remote or upgrade that allows me to adjust my Sonos Soundbar Volume?

    No, roku remotes only control tv volume. If you can get your tv controlling the volume of the soundbar via hdmi cec, then the roku remote will control the tv, which then controls your Sound bar.

Steve B is absolutely correct. I've used my Sonos with three different types of Roku's now. His set up instructions should produce the results you're looking for.

Was one of the three setups a Roku TV? Specifically one that has a wi-fi (point anywhere) remote?
