Not sure if you've reached a solution, but I wanted to share my experience today. I was also searching for how to get the Roku remote to control the Sonos Playbar. I got it to work pretty easily.
Here's my setup:
Roku Ultra 4660X
Vizio V-series 58" 4k
Sonos Playbar with remote Sub and 2 Play-1's as rear surrounds (all in 5.1 config)
- I disabled all speakers on my Vizio TV via TV settings.
- Made sure Roku connected to HDMI-1 (ARC) port
- Opened SONOS app on mobile phone
- Selected the room with the speakers I wanted to control
- Went into Settings, then "Remote Control Setup"
- Told it "Replace current remote", then "Continue"
- Pressed "Volume Up" button on Roku Ultra remote
- SONOS noticed the signal and said it was complete.
- Selected "Done"
It all works as I wanted. Hope this helps!

Do you need the Roku ultra for this to work? I just have a “standard” roku streaming stick.

You may need the Roku Ultra remote. I think I read somewhere that it has the infrared (IR) functionality that the Sonos recognizes. I'm not an expert in this so please do your own research.

Both roku ultra and roku stick remotes are wifi, they both control non-roku tv's by IR, and then the Tv controls the soundbar by hdmi-cec. Even if you had a roku connected to roku tv and it's remote is controlling the roku tv volume by wifi, the roku tv will still pass on hdmi-cec signal to whatever device is connected to it.

Many SONOS systems only connect via optical cable so ARC isn't an option. It needs to be infrared but I still don't see why that is a problem.
