I have done some troubleshooting after seeing everyone has the same issue.
I found that on iOS devices the problem is a privacy setting in Wi-Fi settings.
Go to:
Settings > Wi-Fi > “your_wifi_name”.
Then locate Private Wi-Fi Address setting and switch it to off.
After completing these steps your Apple Airplay should work as advertised.
This worked for me. Hopefully you find this solution useful. 😁

I have a Roku Stick OS version 11.0.0 and mirroring works just fine. I can even mirror to my MacBook Pro, so I know the issue is not with my phone settings. My Roku TV OS version 12.5.0 does not work, nor will any of the other Roku devices I have in my home running that OS. I think I can safely ascertain the the issue is in the 12.5.0 update. Please fix.
