I have been a long time Firestick user and recently switched to Roku. The Roku is great, however one of my favorite apps Tou.Tv is not part of the list. Can this be added or is there a workaround? Thanks

You will need to find the developers of Tout.TV and ask them to write an app for Roku. Roku only provides a platform for 3rd party developers, and Roku Channel and the media player are all that Roku themselves write and maintain.
