How do you change the color of the Loading Bar at the bottom of the screen that appears whilst waiting for the video to appear. We currently have Roku’s standard grey. I noticed on a few channels on Roku that they have custom colors in the Loading Bar at the bottom of the screen.

Not currently possible with roVideoScreen.

You could try drawing your own buffer screen with roVideoPlayer and roScreen or roImageCanvas. Disney and Crackle use this approach.
