I was having problems with the Roku Express displaying the home screen menu settings fully. Each screen had the left side justified so far over, I could not read the entire menu option. Also, when I streamed  YouTube TV, I could not see or access the top or sides menu selections. After a week of trying to change the display settings on the Roku, nothing helped. So, come to find out I discovered that I needed to change the aspect mode on my TV (Insignia) settings. It was set to cinema mode and I changed it to normal mode and that fixed the problem!  

I hope this helps someone else who may be having the same issues.

I am having the same problem. How did you change it?

@Audra, look for a Zoom P(icture) Size, or Aspect button on your TV's remote and press it a few times until the picture looks good.  If there isn't a button you may have to go into the TV's settings.
