There is a setting to mute the camera. Press * on your remote when the thumbnail version of the camera is highlighted (i.e., before you make it full screen). I've had the sound drop out on my floodlight camera after a few seconds even with mute disabled. I chalk it up to there being much more work that needs to be done by Roku on these smart home devices.
