You need a AV to HDMI converter that has an aspect ratio switch, like https://www.amazon.com/AUTOUTLET-Converter-Aspect-Ratio-Switch/dp/B0D46X9Y6J -- the earlier cheap models always stretched the signal to 16:9, and Roku TVs don't have a "shrink" picture mode, just "stretch" and "fill".
