HOLY COW I WAS MESSING WITH SETTINGS AND FIGURED IT OUT GUYS! It was an apple update that messed it all up. In Airplay & Continuity settings, the setting "Automatically Airplay" is set to "Automatic" and thats why it kept turning off and on again ☠️ . I turned it to "Never" and my airplay has been playing flawlessly for 2 hours now ❤️💜❤️ Its like when i first bought my TV again

That is a positive! However that is a setting on iOS not macOS, so still not a fix for Mac :(

Never mind— my phone was already set to “Never” and I still have this problem with every Roku device, and only Roku devices. TV restart is the only way to fix it. FIX THIS, ROKU!!!!!
