So I finally figured it out. You have to go into the roku settings turn off the captions then back on while watching the video.
This unfortunately isn’t working for me and it seems like there is zero actual help available. I rely on subtitles and this is incredibly annoying. If anyone has an actual fix I would greatly appreciate it. About to stop my subscription as this is the only app I have this issue with, not very inclusive Disney.
things I’ve done:
the obvious of have subtitles on via the * menu
resetting my Roku
uninstalling and reinstalling the app
the above trick of turning it off in program and then back on
Making sure all software is up to date
I had the same issue. What I did was go out of the app, then go into the Roku settings and turn off the subtitles. Then went back into the Disney+ app and turned them back on via the * button.
This is annoying but it worked for me. I guess when I'm done watching the Disney show I will have to back to the Roku settings and turn them back on. Annoying bug!

too many rabbit holes. too little useful information.
I found one that works. Close the app. Go to Roku settings. Turn off the cc. Load the app back up. Turn on your video. Then access the accessibility settings through the * button and turn the cc back on. I’ve tried all the tricks in the comments. This one worked.

This did not work. The only thing that worked was to exit the app, turn cc OFF in the Roku settings and then turn cc on via the * button while in the app.
