It's not a Roku issue. Hulu is responsible for how their app functions.
I contacted Hulu support. We went though a number of steps and it was determined that the Roku must be limited by available storage in showing all of my saved content. I have no idea how much storage I have used. I believe I have 2GB of storage. I have not downloaded any content that I am aware of, other than the apps themselves. I only have 9 apps total. Pluto, Britbox, Hulu, Prime, Disney+, Roku Channel, Roku Photo Streams (apparently screens savers), Tubi and Plex.
Update: I toyed with removing items from "My Stuff - My Episodes" and then re-adding them. It appears I cannot have more than 12 episodes saved in My Stuff on the Roku. As I removed items, one at a time, and checked, an older one I had saved would then appear. Limited absolutely to 12 episodes.
They are all listed on Hulu.com, though, so I guess I can at least access the list until I've got them all memorized. I just wish could have them on the Roku because then I can just watch the ones saved.

In addition to what our Community Expert provided in the above post, Hulu's Support team will be able to assist you further with your concern as they develop and manage their app on the Roku streaming platform independently.
Furthermore, the Roku Ultra LT has a 2GB RAM. It may be possible that your saved list will affect your current storage.
