My streambar has stopped responding to the remote and cannot be found on my Roku remote app. Restarted and reset the device, neither has helped. Now it is stuck on the setup screen.

Have you already tried replacing the batteries in your remote to see if that helps resolve the issue you are experiencing?
If you are still unable to setup your Roku Streambar, can you please provide the serial number/device ID on your Roku device? I'll be able to assist you further from there.
