Like the title said, it's really annoying.

Every time I'm watching TV and need to pause for a minute, the TV start paying back on it own. Sometimes takes a couple of seconds, sometimes takes longer. Always when playing live TV.

(it also happens when I ask the Google Asistant to pause it, not just with the remote) 

Any idea what could that be?

When using the Live TV Pause feature on your Roku TV, are you making sure to follow the steps and requirements outlined in our Support page here: Pause live TV?
