Hi there! How is your Ultra connected? Does it run through an AVR, or is it connected directly to the TV?
The Ultra 4800 has an audio setting that no previous Roku has ever had, labeled Auto Passthrough. Check that setting and try changing it and see what happens.
That said, I tried Spotify on my 4800, and only saw stereo audio. I only have a free account, so I can't say if 5.1 requires a Premium subscription. It's also possible that Spotify has dropped 5.1 support on Roku devices. I simply can't say, as I seldom use it myself.
