A Google Sheets file (or Excel file, etc) will display if there is an application to read the document and convert it into a displayable format. For an Excel file, you need an Excel app, or an app that will read Excel documents.
If I wanted to put an Excel spreadsheet on my TV using a file on a Google drive and Roku, I'd use my laptop to open a Chrome browser, open Sheets, and then open the Excel file using Sheets. Then, I'd cast the browser tab to the Roku.
I'm not certain there's an app for Roku that will read an Excel file.
