So with more explanation, whether on two different tvs or also using a phone/computer if you wanted to watch a show that is on the actual Roku app but say on a different episode than someone else who is watching it elsewhere can you do this since Roku app doesn't allow you to create separate profiles like Netflix, hulu, etc? Or will it screw up the other person even if you were on your break at work and they were at home?

Yes, you should be able to watch both on a Roku device and on the Roku mobile app different content, as long as the Roku mobile app isn't currently connected to the Roku device.
