Where did News go?

There used to be an option in settings to show “News” on the home screen.

It led to a wonderful collection of categories

Best of Late Night
Weird and Viral
Food
Trending
News
etc.

It was great to catch a few minutes of fun animal videos, recipes, late night clips, etc.

But it‘s no longer there! Is there any way of bringing it back?

It's gone. No way to bring it back as it was. Roku made a blog post about its replacement. They are planning on putting live news in the Roku Channel long term. There's an AOL news channel which basically is the same source as the News menu item.

You must add the "AOL.News" Channel. It has the same News stories there that Roku used to allow you access to through a link in the Home Page Menu. I know that was easier to navigate in some ways. It was more utilitarian. But, the AOL.News channel is fancier with a different layout, to access the same stories. Just something new to learn, for all ages.
