Roku no longer displays on my device AirPlay screen.
It seems that the Roku Ultra support of AirPlay is random and intermittent, at best.
Can anyone please offer any suggestions?

Can you open the Roku's AirPlay settings? (Settings/Apple Airplay and HomeKit)
Have you restarted the Roku and phones/tablets/computers?
Yes, in the Roku settings AirPlay is ON.
I have restarted the Roku and my iphone/ipad numerous times.
The last time I tried to use AirPlay was last weekend and it was working then from my iPhone. So, I know it will work but it's intermittent and I don't know why.

Lots of issues could cause intermittency.
What is your firmware version/build? (Settings/System/About)
Try turning AirPlay OFF, reset the paired devices (under Require Code), RESTART the Roku, Turn AirPlay ON, see if that results in better consistency.
There's a good chance there's something within your network that is causing the issue, but exactly what I can't really say. While I have never used AirPlay except as a test, every Roku device in my home appears as a destination every time I look. And this is a mix of 2.4 and 5 GHz WiFi connected Roku devices, along with a couple that are hard wired. My phone is connected to one of my 5 GHz access points (I have 3 in my home), while the Premiere is on a different AP using 2.4 GHz. I have several iOS devices and they all see every Roku I have.
If you haven't rebooted your router/access point recently, you might give that another try. Sometimes they simply get a "hiccup" and a reboot clears them up.

I’ve restarted my network twice. I’ve also turned off AirPlay on the roku, unpaired devices, restarted the Roku, turned AirPlay back on,etc
restarted devices, too.

Model 4670X - Roku Ultra
I have Factory reset the device. Connected to my home network (My Iphone is in the same netwrok), Turned ON the Apple Airplay option in the Roku Ultra. (Under Apple airplay and homekit settings)
When I try to airplay from my devices it is not showing up in the available screen mirroring list.
Neither from Youtube/Netflix/screen mirror whole screen.
Please help me if you have any idea about this.

Somewhere in your router settings it has something turned on that is blocking your phone from seeing your Roku. Many routers/access points have a security setting that blocks wireless devices from seeing other devices on the network. Guest WiFi networks always have it enabled. You need to look through your router and disable that setting.
