No, 2048 is not too large of a bitrate. Perhaps a little low if you are delivering HD quality video.
You might find that your Dreamhost isn't sufficient to handle streaming to thousands of viewers. I see they have a "DreamSpeed CDN" offering - an edge cache network like that would (theoretically) make your single server solution work better, since each video would be downloaded once to the regional servers and then distributed to users from the edge servers.
Make sure you have planned your monetization strategy carefully as delivering video can get quite expensive.
