I own three (3) Vizio televisions. I have connected a Roku Stick+ to two of the televisions without issue, all functions work flawless. When I connect the third Roku Stick + to the third Vizio television I receive a message that more information is needed and to enter the brand manually. When doing so I receive another message stating the the brand is not recognized. I've attempted another HDMI port and checked to make sure CEC was enabled all with the same results. The remote works fine other than not being able to adjust volume or turn the tv on and off. Also while setting up the remote I do hear the music just fine.

Have you tried the non-working stick/remote on one of the two working TVs?  I would think that since they're all Vizio TVs if you can complete the setup on one TV you should be able to move it to another and have the remote function properly.
